Katie is the mother of 4 boys Michael 27; James 25; Peter 21 & Stephen 17 and it’s her son Micheal who is living away from home, he was living in Germany for a number of years and in February he moved to live in Barcelona, Spain. Katie’s family owned and ran a bakery in Ennis until 2000 so good food was always a feature of their lives. Her sons have all been interested in running so food played a huge role in their training and diets so cooking good wholesome food from scratch was always a priority for Katie.
