Christmas with Mark Moriarty 

Mark says “This year I am steering clear of the classic ham and turkey, not because I have fallen out of love, but I just think there are enough recipes and hacks doing the rounds at this time of year and I wanted to bring something new for the festive offering” The meal begins with Scallops “Pil Pil” in roasted garlic butter on warm sourdough, a luxurious alternative to smoked salmon. 

The main event is a slow-roasted striploin of beef that cooks in less than half the time of a turkey. Sides include roast beef-dripping potatoes, indulgent cauliflower gratin, and a zesty celeriac and sprout remoulade. Dessert is a nostalgic Steamed Marmalade Pudding with homemade vanilla-pod custard. With tips on timing, make-ahead tricks, and pro-level plating, this could become your new Christmas go-to.
