How To Cook Well in Morocco

In this new seven part series, Rory O’Connell visits Morocco, one of his favourite countries. This is the first cookery series for RTÉ that has been filmed in Africa.

“Since first visiting Marrakech in 1988, I have visited Morocco many times and have been entranced by the place, the people, the food, the sights and sounds, the exotic atmosphere and the new discoveries,” he says.

“To be able to revisit favourite places and discover new ones, and to share those experiences has long been a dream of mine.”

Rory travels from Tangier on the north coast to Essaouira on the Atlantic coast, visiting Chefchaouen, Fez, Marrakech and the Atlas Mountains along the way. 

At the end of each programme, Rory cooks a dish that has been inspired by his travels, capturing a flavour of Morocco, back home in East Cork.

Episode Two: Chefchaouen Tucked under the Rif mountains which gave it protection from the waves of marauding invaders, Chefchaouen is famous for its gorgeous blue buildings. By good fortune, Rory arrived in the town on market day, so traders lined the narrow streets. Communal ovens can be seen throughout Morocco, and Rory watches in admiration as a procession of raw dishes are delivered by the local residents to be put in the oven by the chef who has to remember exactly how each customer likes their dish to be cooked.   At the Tissemial Restaurant Rory learns how to make beef meatball tagine, and then meets a local guide to learn more about the city’s dramatic history. At Bab Sour Restaurant, Rory meets chef Said Rahma and sees how ‘Bissara’, a traditional soup made with fava beans, is made.
Back home in his Ballycotton kitchen Rory cooks a Spiced Moroccan Lentil Soup.
