Muckross Traditional Farms is an award-winning visitor attraction, offering an experience of Irish country life during the 1930s and 1940s with working farms and authentic farm cottages, and showcasing rural crafts such as fresh bread baked over an open fire and butter making.
In this first of two Christmas specials, Neven prepares Crispy Dublin Bay Prawns in Kataifi Pastry with Sauce Vierge, which he makes for his family every Christmas.Neven then meets guide Joan O’Connor to learn all about rural Christmas traditions in Ireland, and of course typical Christmas foods. He learns how a Christmas turkey or goose was cooked over an open turf fire.
Neven then prepares Roast Rack of Lamb with a Pistachio Crust, which is perfect for hosting a small dinner party around Christmas.
He heads to Lakeview House on the shores of Lough Leane near Killarney to meet whiskey producer Maurice O’Connell of Wayward Irish Spirits and is treated to a tasting of two whiskeys: The Liberator is a blended malt whiskey matured in Tawny Port casks and is named after Maurice’s forebear, the political leader Daniel O’Connell. The Single Estate is made from barley grown on the O’Connell estate in Killarney, and matured in red wine barrels from Bordeaux.
For pudding Neven prepares a Christmas favourite with a twist – a Black Forest Trifle made with poached cherries and chocolate custard.
