Chef Paul Flynn sets off to discover trucks producing delicious dishes with chicken. In Dublin, he visits the Dosa Dosa food truck serving up authentic South Indian cuisine. Later he cooks his take on a butter chicken curry and crispy roast chicken arancini before dishing them up from his own truck at the Suir Valley Railway in Waterford.

From his restaurant in Dungarvan, Chef Paul Flynn has watched in admiration as enterprising chefs embraced the challenge of delivering fantastic fare to outdoor diners.
