Later we will see Catherine cook up some delicious Mexican treats including her own twist on Enchilladas with her original Coriander and Lime Chicken Enchilladas along with new dishes Prawn Tacos with Mango Sweetcorn Salsa & Red Pepper and Black Bean Tacos with Pico De Gallo + Prawn Scallop Mango and Avocado Ceviche.

In Blanchardstown, Catherine meets Alexandra, mum Marina and younger sister Aisha and grandparents, who moved to Ireland in the 90’s from Russia and we experience traditional Russian dishes in their home, then it’s off to Playa del Carmen, Mexico. to visit Anna, Alexandra’s sister who lives there.

Playa del Carmen is approximately 70 km south of Cancún and is at the centre of the Mayan Riviera making it a popular tourist resort with over 4 million visitors to the area each year. A major attraction throughout the Riviera Maya are coastal and reef aquatic activities dependent on the coastal water and Belize Barrier Reef which begins near Cancun and continues along the whole length of the Riviera Maya continuing southward to Guatemala. This barrier reef system is the second longest in the world.

Catherine heads into the jungle to meet and cook with a traditional Mayan family, tries her hand (and tests her heart rate) at Zip-lining and visits a Cenotes, (a natural sinkhole), which are very common the Yucatán Peninsula of Mexico.

Catherine Fulvio said of her Mexican experience “Vibrant, fresh flavours to tickle the tastebuds, colours that delight and a humble pride in tradition are the overwhelming memories of my experience in Mexico – but they should have warned me about the deep fried grasshoppers in the guacamole! Mexico was a fabulous culinary experience from start to finish and it is a country that I would love to visit again and learn more.
