Series 13, programme three

Series Overview:
This is the second seven part series Neven has dedicated to seafood, and his search for the finest and freshest produce takes him to East Cork and Ballycotton, Clare, Waterford, Kenmare and Castletownbere. He also visits Kilmacalogue and Kinsale, Donegal and Wexford.

Programme three: Waterford

Neven travels to Waterford this week and his first stop is Waterford City, where he heads to the Apple Market, and Bodega Restaurant. Head Chef Sebastian Lajoye, who specialises in cooking local produce with a Mediterranean twist, cooks Pan Fried Fillet of Cod with Hummus, Broccoli, Red Pepper, and Red Pepper Tapenade.

At Dunmore East Neven has a power boating lesson with instructor Rupert Musgrave of Dunmore Adventure.

Dungarvan is Neven’s next stop for a visit to And Chips, a contemporary takeaway where owner Eunice Power introduces Neven to Ling, a species of fish he hasn’t tried before and something of a local delicacy. Eunice shows Neven her recipe for Ling Goujons with Tartare Sauce, Mushy Peas, and Chips.

Tucked away in the seaside town of Tramore are the Lafcadio Hearn Japanese Gardens where Project Director Agnes Aylward tells Neven the story of writer Lafcadio Hearn.

The Japanese Gardens are the perfect setting to learn about sushi, and here Neven meets Tetyana Zhemerdyey whose company Glorious Sushi is based in Tramore. Under the Japanese pagoda, Tetyana teaches Neven how to hand roll and slice fresh sushi.

Neven’s own recipe this week is Haddock with a Hazelnut Crust.
