Two Part Series Overview:

In search of mouthwatering Irish Christmas food, Neven heads to Co Waterford, voted the winner of “Foodie Destination of the Year 2019” by the Restaurant Association of Ireland. Meeting local artisan food producers and cooking with some of the county’s most talented chefs, Neven also shares his own crowd pleasing Christmas recipes.

From the traditional favourites of turkey, lamb, and ham, to stylish starters and delicious desserts, Neven serves up an inspiring menu of seasonal dishes, including a healthy Christmas Brunch, and an inventive take on roast turkey legs.

Neven’s base for this festive trip is the beautiful Faithlegg Hotel, a restored 18th century mansion close to Waterford City and the perfect location from which to explore the whole county.

Programme one:

In the elegant setting of the Faithlegg Hotel, Neven gets to work on his Christmas feast in the first of his two Christmas specials.

His first dish is that Christmas favourite – glazed ham. With one main course completed, it’s time to think about the starters. Keen to use traditional ingredients, Neven heads to McGrath Butchers in the village of Lismore where the McGrath family have run their butcher shop for generations.

Neven chats to butcher John McGrath and learns how Spiced Beef is made before returning to the Faithlegg Hotel and preparing his own recipe of Spiced Beef Croquettes with Celeriac Remoulade.

Neven is joined by Jenny Flynn, Head Chef at the Faithlegg Hotel who shares her recipe for Faithlegg Cured Salmon in Thin Gin, which is distilled in Waterford.

Christmas wouldn’t be complete without a turkey, and Neven adds his own twist, preparing Turkey Breast marinated in Buttermilk and Chorizo Butter, served with vegetables. Always keen to provide options for vegetarian visitors at Christmas, Neven heads to the GIY Café at Grow HQ in Waterford City. Here, Chef JB Dubois shows Neven how to prepare Chilli Roast Squash with Chestnut and Sage Stuffing.
