Episode 6:

Cornish-born 30 year old Jordan Bailey, the former head chef from Oslo’s three Michelin star restaurant, “Maaemo”, has come to Ireland to open his first restaurant in Kildare.  With only a few months before the doors open, Mark Moriarty visits the building site that will be transformed into a unique 24-seat dining experience. Jordan explains to Mark that when it comes to pressure, there is nothing like trying to start up a brand new fine dining restaurant.

Mark returns to the restaurant one month after opening and spends more time with Jordan and his new-wife, Majken Bech who runs the front of house. Together, they meet with local food producers who Jordan believes are the real “unsung heroes of the restaurant industry”  The restaurant only uses seasonal Irish indigenous ingredients so it’s important for Mark to explore this with Jordan. With Majken, the chefs create a memorable taster menu on the grounds of the new restaurant with local food producers in attendance.
