Neven Maguire is back with another delicious Christmas special, and as always he has a few surprises and twists to the traditional Christmas dinner – this time, it’s a salt rub which ensures a succulent and tasty turkey. The potatoes are roasted in beef dripping and other vegetables include Celeriac and Sweet Potato Boulangere which Neven describes as hassle-free as this dish can be prepared up to three days in advance.
Aromatic Crusted Butterflied Lamb with Garlic and Orange Salsa is one of Neven’s favourite ways to cook lamb and when served with a Pomegranate Salad, it’s a great way to feed a large number of people over Christmas and the New Year.
And what nicer ending to a very special Neven Christmas dinner than MacNean Frangipane Mince Pies? Neven gives us his mincemeat recipe, and then makes mince pies with a frangipane topping.
